It has to be said that one silver lining we have experienced during this pandemic is the public's shift towards quality. Gone has the hunger for cheap convenience, wonderfully replaced by the ethos of local, independent and small. It has been joyous to witness all the small businesses flex their resourceful creativity and flourish in a time of panic. No time for laziness or big chain arrogance, you snooze you lose, and in a big way.

As we slowly, but surely see our lockdown tiers lifted, I for one am excited for the future of hospitality. The gaps in the market savvy new entrepreneurs are chomping at the bit to fill, new and improved ways to dine, and of course delicious new dishes ready to be eaten!
